We’re talking creamy vanilla ice cream made with whole milk and cottage cheese for a silky, high-protein base, mixed with soft, almond-flour cake crumbles and a pop of colorful sprinkles.

Ingredients
Ice Cream Base (Vanilla)
1½ cups whole milk
½ cup full-fat cottage cheese
3 Medjool dates, pitted
Pinch of sea salt
Seeds from 1 vanilla bean (or 1 tsp pure vanilla extract)
Birthday Cake
1 cup almond flour
1 tbsp coconut sugar
1 tbsp chia seeds
½ tsp baking powder
2 tbsp butter, melted
2 tbsp plain Greek yogurt
Pinch of salt
Mix-In & Toppings
1 tbsp sprinkles (plus extra for topping)
Optional: extra cake crumbles for garnish
Instructions
1. Make the Cake:
Preheat oven to 325°F (160°C).
In a bowl, combine almond flour, coconut sugar, chia seeds, baking powder, and salt. Stir in melted butter and Greek yogurt until a batter forms.
Spread evenly in a parchment-lined baking dish and bake for 20–30 minutes, or until golden and set. Cool completely before crumbling.
2. Make the Ice Cream Base:
In a blender, combine whole milk, cottage cheese, dates, vanilla, and salt. Blend until completely smooth.
3. Freeze the Base:
Pour into your Ninja Creami pint container. Freeze for at least 24 hours, making sure it’s level.
4. Spin & Mix:
Remove from the freezer and let sit at room temperature for 10 minutes.
Spin on Lite Ice Cream setting.
If crumbly, add 1–2 tbsp whole milk and respin.
5. Add the Fun:
Make a small well in the center of the ice cream, add 1 tbsp sprinkles and a handful of cake crumbles, then use the Mix-In setting.
6. Serve:
Scoop into a bowl or cone, top with extra sprinkles and cake crumbles, and enjoy every celebratory bite.
