Chocolate Brownie Ice Cream
If a rich, fudgy brownie and creamy chocolate milk had a baby… this would be it. This gut-friendly chocolate brownie mix-in ice cream brings you all the indulgence, without the crash or the bloat. The best part? It’s high in protein and totally refined sugar-free.
Ice Cream Base Ingredients (Freeze First):
1½ cups whole milk
½ cup full-fat cottage cheese
3 Medjool dates, pitted
2 tbsp unsweetened cocoa powder
½ tsp vanilla extract
Pinch of sea salt
Optional: ½ scoop chocolate or vanilla protein powder (for added creaminess and protein boost)
Directions:
Blend all ice cream base ingredients in a high-speed blender until completely smooth.

These gluten-free, bloat-free brownies are rich, chewy, and perfect as mix-ins or just snacking while you blend.
Dry Ingredients:
½ cup almond flour
¼ cup coconut sugar
3 tbsp cocoa powder
¼ tsp sea salt
½ tsp baking powder
Wet Ingredients:
1 egg
2 tbsp melted butter or coconut oil
1 tsp vanilla extract
2 tbsp whole milk (as needed for consistency)
Brownie Instructions:
Preheat oven to 350°F and line a small pan or loaf tin with parchment paper.
In a bowl, mix all dry ingredients. In a separate bowl, whisk wet ingredients together.
Combine wet and dry, stirring until a thick brownie batter forms. Add almond milk as needed.
Spread into pan and bake for 12–15 minutes until center is just set. Let cool.
Cut into small brownie “bites” or crumble gently for mix-ins.
Creami Spin Time:
Remove frozen pint and let it sit at room temp for 10 minutes.
Spin on “Lite Ice Cream” or “Smoothie Bowl” setting.
If crumbly, add 1–2 tbsp milk and respin until smooth.
Add brownie bites to the center well and use “Mix-In” setting to fold in.
Optional Toppings:
Shaved dark chocolate
Coconut flakes
Extra brownie chunks
Drizzle of almond butter or melted chocolate
