- 1 cup cooked and mashed sweet potato (about 1 medium sweet potato) 
- 1/2 cup almond butter 
- 2 eggs 
- 1/3 cup honey 
- 2/3 cup cocoa powder 
- 1 teaspoon baking soda 
- 1 teaspoon ground nutmeg 
- Pinch of salt 
- 1/2 cup Greek yogurt (for extra moisture and protein) 
Chocolate Ganache
- 1/2 cup full-fat coconut milk 
- 1/3 cup chocolate chips (semi-sweet or dark chocolate recommended) 
- 1 tablespoon coconut oil 
Instructions
- Prepare the Sweet Potato: Start by cooking the sweet potato until it’s soft. You can either bake it in the oven at 400°F (200°C) for about 45 minutes, or microwave it for about 6-8 minutes, until tender. Let it cool, then peel and mash until smooth. 
- Preheat the Oven: Set your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper for easy removal. 
- Mix the Wet Ingredients: In a large mixing bowl, combine the mashed sweet potato, almond butter, eggs, honey, and Greek yogurt. Mix until smooth and well incorporated. 
- Add the Dry Ingredients: Add the cocoa powder, baking soda, ground nutmeg, and a pinch of salt. Stir until you have a smooth, thick batter. 
- Bake: Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. 
- Prepare the Chocolate Ganache: While the brownies are baking, make the ganache. In a small saucepan over low heat, combine the coconut milk, chocolate chips, and coconut oil. Stir until the chocolate melts and the mixture is smooth.
