Oven-Roasted Brussels Sprouts
For a side dish that’s both nutritious and full of flavor, try these oven-roasted Brussels sprouts with a buttery, crunchy cashew topping. The Brussels sprouts turn perfectly caramelized in the oven, and the cashews add a rich, buttery crunch that’s hard to resist.
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1/4 cup cashews, crushed
- 2 tablespoons butter
- 1 clove garlic, minced (optional, for added flavor)
Instructions
Step 1: Prepare the Brussels Sprouts
- Preheat the Oven: Set your oven to 400°F (200°C).
- Season the Brussels Sprouts: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
Step 2: Roast the Brussels Sprouts
- Spread the Brussels sprouts in an even layer on a baking sheet. Roast in the oven for about 20-25 minutes, or until they are golden brown and crispy on the edges. Give them a toss halfway through to ensure even cooking.
Step 3: Make the Cashew Butter Topping
- Toast the Cashews: In a small skillet, melt the butter over medium heat. Add the crushed cashews, and sauté until they are lightly toasted and golden, about 3-5 minutes. If you’d like, add minced garlic for extra flavor.
Step 4: Combine and Serve
- Top the Brussels Sprouts: Once the Brussels sprouts are done roasting, transfer them to a serving dish and sprinkle the cashew topping over the top. Toss gently to combine if desired, or leave the cashew topping as a garnish.
- Serve: Enjoy these Brussels sprouts warm as a savory side to any meal!
