  • 1 tbsp coconut oil, melted

  • 1 tsp pumpkin pie spice

  • 1 tbsp vanilla extract

For the Chocolate Coating

  • ½ cup dark chocolate chips

  • 1 tsp coconut oil (for melting)

  • Flaky sea salt, for topping

Instructions

  1. Make the dough:
    In a bowl, combine protein powder, almond flour, almond butter, pumpkin purée, melted coconut oil, pumpkin spice, and vanilla extract.
    Mix until a soft, dough-like texture forms.
    (If it feels too dry, add a touch more pumpkin or a small splash of almond milk.)

  2. Roll into balls:
    Use a cookie scoop or your hands to roll the mixture into 10–12 bite-sized balls.
    Place them on a parchment-lined tray.

  3. Melt the chocolate:
    In a small bowl, melt dark chocolate chips with coconut oil in the microwave or over a double boiler until smooth.

  4. Coat the balls:
    Dip or roll each protein ball in the melted chocolate until evenly coated.
    Place back on the tray and sprinkle a pinch of flaky salt on top.

  5. Set + chill:
    Refrigerate for 20–30 minutes until the chocolate hardens.
