Pumpkin Maple Chia Seed Tiramisu Pudding

This creamy pumpkin chia parfait tastes like a pumpkin spice latte meets tiramisu — but made with nourishing, gut-friendly ingredients.
We layer pumpkin maple chia pudding with a whipped cottage cheese cream and finish with cinnamon + cacao dusting for that tiramisu moment.
It’s cozy, satisfying, lightly sweet, and perfect for breakfast, dessert, or meal prep.
Ingredients
Serves 2–3
Pumpkin Maple Chia Layer
1 cup milk of choice (almond, coconut, dairy, etc.)
3 tbsp chia seeds
⅓ cup pumpkin purée (unsweetened)
1–2 tbsp pure maple syrup (to taste)
1 tsp pumpkin pie spice
½ tsp vanilla extract
Pinch of sea salt
Whipped Cottage Cheese Cream Layer
1 cup cottage cheese
1–2 tbsp maple syrup
½ tsp vanilla extract
Optional: 1 tbsp Greek yogurt for extra creaminess
For Serving
Cinnamon
Cocoa powder (optional, for “tiramisu” effect)
Crushed pecans or pumpkin seeds (optional, for crunch)
Instructions
1. Make the Pumpkin Chia Base
In a bowl or jar, whisk together:
milk, chia seeds, pumpkin purée, maple syrup, pumpkin pie spice, vanilla, and salt.
Let sit 10 minutes, whisk again to break up any clumps, then refrigerate at least 30–60 minutes to thicken.
2. Make the Whipped Cottage Cheese Cream
Blend cottage cheese, maple syrup, and vanilla until completely smooth and silky.
(If you want a fluffier cream layer, pulse in 1 tbsp Greek yogurt.)
3. Layer the Parfaits
In clear glasses or jars, layer:
Pumpkin chia
Whipped cottage cheese cream
Repeat until glasses are full
End with the cream layer on top.
4. Finish & Serve
Dust lightly with:
Cinnamon
A hint of cocoa powder (optional, but so pretty)
Add crushed pecans or pumpkin seeds for texture.
Serve immediately — or refrigerate up to 3 days.
