Spinach Cottage Cheese Wraps

Ingredients

  • 1 cup full-fat cottage cheese

  • 2 large eggs

  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 350°F / 175°C. Line a baking sheet with parchment paper and lightly spray or brush with oil to prevent sticking.

  2. In a blender or food processor, combine the cottage cheese, eggs, spinach, parmesan cheese, garlic powder, and Italian seasoning. Blend until completely smooth (about 45 seconds to 1 minute).

  3. Pour the mixture onto your lined baking sheet and spread evenly into a thin layer using a silicone spatula.

  4. Bake for 30–35 minutes, or until the top is set and lightly golden. Some ovens may take up to 40 minutes—don’t rush it.

  5. Let the flatbread cool fully before peeling it off the parchment paper. It firms up as it cools.

  6. Use as a wrap, taco base, or toast with your favorite gut-loving toppings—like smashed avocado, turkey, pesto, or sautéed veggies.

Pro Tip:

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a dry skillet for a minute or two to revive texture.
