Ingredients

  • ½ cup full-fat cottage cheese

  • ½ cup Greek yogurt (plain, unsweetened)

  • 2 Medjool dates (soaked in hot water for 5–10 minutes, then pitted)

  • Pinch of sea salt

  • ½ tsp vanilla extract

  • 1 tsp hot honey (swirled in after blending)

  • Topping: Crushed graham crackers (like Simple Mills)

Instructions

  1. Soak the Dates
    Place your pitted dates in a small bowl with hot water for 5–10 minutes to soften. This makes blending much easier and ensures a smooth texture.

  2. Blend It Up
    In a blender or food processor, add the cottage cheese, Greek yogurt, soaked dates, sea salt, and vanilla extract. Blend on high until smooth and creamy (about 45–60 seconds).

  3. Chill
    Transfer the dip to a bowl and refrigerate for 20–30 minutes. This step allows it to thicken slightly and develop that cheesecake-like consistency.

  4. Finish & Serve
    Swirl in 1 teaspoon of hot honey for a sweet-spicy kick. Top with crushed cinnamon crackers for the perfect crunch.
