Carrot Ginger and Turmeric Soup with Crispy Tofu ‘Croutons’

Ingredients
For the soup:
- 2 tbsp olive oil 
- 1 medium onion, diced 
- 3 garlic cloves, minced 
- 1 tbsp fresh ginger, grated 
- 1 tbsp fresh turmeric, grated (or 1 tsp ground turmeric) 
- 6 large carrots, peeled and sliced 
- 4 cups bone broth (or vegetable broth to make it vegetarian/vegan) 
- 1 cup coconut milk 
- Salt and pepper, to taste 
For the crispy tofu 'croutons':
- 1 block firm tofu, pressed and cubed 
- 2 tbsp olive oil 
- 1 tsp smoked paprika 
- 1/2 tsp garlic powder 
- Salt and pepper, to taste 
Instructions
Prepare the tofu ‘croutons’:
- Preheat your oven to 400°F (200°C). 
- Toss the cubed tofu with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread the tofu evenly on a baking sheet lined with parchment paper. 
- Bake for 25-30 minutes, flipping halfway, until golden and crispy. 
Make the soup:
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 5 minutes. 
- Stir in the garlic, ginger, and turmeric, and cook for another 1-2 minutes until fragrant. 
- Add the carrots and bone broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the carrots are tender. 
- Use an immersion blender (or transfer the mixture to a blender in batches) to blend the soup until smooth and creamy. 
- Stir in the coconut milk and season with salt and pepper to taste. Heat through gently. 
Assemble:
- Ladle the soup into bowls and top with crispy tofu ‘croutons.’ 
- Garnish with fresh herbs like cilantro or parsley, if desired.
