Ingredients
1 ripe banana
2 large eggs
½ cup full-fat cottage cheese
Optional toppings:

Instructions
Blend or mash: In a blender or mixing bowl, combine the banana, eggs, and cottage cheese until smooth. If mixing by hand, mash the banana thoroughly before whisking in the eggs and cottage cheese.
Cook: Heat a pan or griddle over medium heat. Lightly grease with avocado oil or butter. Pour small rounds of batter onto the pan. Cook for 2–3 minutes on one side until bubbles form, then gently flip and cook for another 1–2 minutes.
