Healthier Gingerbread Man Cookies

Soft, warmly spiced, naturally sweetened, and made with almond flour — these gingerbread man cookies taste like Christmas but keep things gut-friendly and simple. Perfect for decorating, gifting, or dipping into a cozy holiday latte.

Ingredients

Dry Ingredients

  • 2 ⅔ cups blanched almond flour

  • ½ cup coconut sugar

  • 2 tsp ground ginger

  • ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • 1 tsp baking soda

  • ¼ tsp sea salt

Wet Ingredients

  • 6 tbsp melted coconut oil

  • 3 tbsp raw honey or maple syrup

  • 2 tbsp water

  • 1 egg (room temperature)

Instructions

1. Mix the dry ingredients
In a large bowl, whisk together the almond flour, coconut sugar, ginger, cinnamon, nutmeg, baking soda, and salt.

2. Mix the wet ingredients
In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), water, and the egg until smooth and fully combined.

3. Combine the dough
Pour the wet mixture into the dry ingredients and stir until a thick cookie dough forms.
Do not overmix — almond flour can get oily.

4. Chill the dough
Cover the dough and refrigerate for 40 minutes to 1 hour, or until firm enough to roll out and cut.

5. Prepare to bake
Preheat your oven to 350°F.
Line a baking sheet with parchment paper.

6. Roll + cut the cookies
Between two pieces of parchment paper, roll the chilled dough to about ¼-inch thick.
Use gingerbread man cookie cutters to cut out shapes and place them 2 inches apart on the baking sheet.

7. Bake
Bake for 8–10 minutes, or until edges are lightly golden.
Let them cool completely — they firm up as they cool.

8. Optional decorating
Once cooled, decorate with melted white chocolate, coconut butter, or a simple powdered sugar glaze.

Notes

  • For crispier cookies, bake 1–2 extra minutes.

  • For softer gingerbread, chill slightly less.

  • These freeze beautifully — perfect for meal prepping holiday treats.
